This is the time of the year when you have euphoric mood for cooking and creating beautiful meals and dishes. I know that is true, because I can see the posts in my news feed on Facebook. My friends are experimenting and trying new things, exotic meals and drinks, which are making you hungry just by staring at the pictures. That’s why I decided to improve my cooking skills as well. This week I think I’ll try this recipe for spinach pie, it seems to me easy for preparation and cooking, and also truly delicious. Take a look at the recipe and run to the store to buy the ingredients:
Here they are:
12 oz of boiled spinach
12 oz ricotta
3 oz of grated Parmesan
Salt and Pepper
You can use frozen, ready for kneading dough, or you can make it on your own – 2-3 cups all-purpose flour and some more for the rolling, 1 teaspoon salt and 1 teaspoon sugar, 1 cup cold unsalted butter, cut into pieces. Mix the ingredients and add some cold water. Knead the dough until smooth and crumb-less. Wrap the dough while you prepare the filling.
Mix the boiled spinach with the ricotta, then add the egg and stir together. Then add the Parmesan cheese, salt and pepper. Set the bowl aside.
Now take the dough and divide it into two equal pieces. Take one of the pieces and roll it. Make it round in a thin circle. Move it to the pan, over a baking paper sheet. Apply 1/3 of the filling in the center of the rolled dough and the other 2/3 of the filling spread it around that center, but leave some space between the center and the perimeter.
Now spread the other half of the dough, make it the same size of the first one. Lay it over the first dough sheet and the filling. Use a large enough bowl to press the dough around the filling in the center. Then fold the edges and press them with a fork so the filling won’t run out while it bakes.
You can bake it this way, but here is a suggested really gorgeous decoration, which will make the pie look more professional. Cut the perimeter part of the pie with a knife into pieces and turn the pieces out, so the filling will be visible.
Bake the pie at 350 degrees for 30 minutes or until golden.
Serve it in a huge plate in the center of the table and enjoy this delicious pie.
