Vegan cake

Vegan cake

Many people think that is not so easy to be a vegan, or that there are no delicious recipes for vegans. This is definitely not the case, however. Vegans know what is delicious and healthy and if you are not one of them, we invite you to try this vegan “Black forest cherry cake”.

What you will need is:

For the cake
6 oz/ 170g plain flour
2 oz / 55g cocoa
6 oz / 170g sugar
1 tsp bicarbonate of soda
1 tsp cider vinegar
4 fl oz / 110 ml vegetable oil
8 fl oz / 230 ml water
1/2 tsp salt
1 tsp vanilla essence

For the filling:

1 x 14 oz can morello cherries
2 teaspoons Kirsch or cherry brandy
1 oz / 30g arrowroot
1 1/2 tablespoons fine cornmeal (polenta)
5 fl oz / 140 ml sweetened soya milk
2 oz / 55g vegan margarine
1 tsp vanilla essence

How to do it:

Before you start making the cake, preheat the oven to 190C or 375F.
Mix the flour, cocoa, sugar, soda, and salt all together.
Make a well in the center of the mixture and add the oil, vinegar and the vanilla essence. Gradually add the water and mix it until it is smooth but do not overmix it.
Get a cake tin, one you have in your home, line it with greased greaseproof paper and pour in the mixture.
Put it in the pre-heated oven and bake for 35-40 minutes. Before removing it from the oven, try it if it is well-baked with a toothpick. If the mixture do not stick on the toothstick then it is baked.
Allow to cool for 10 minutes then remove from tin and cool on a wire rack. Cut into 3 layers when cool.

The filling:

Soak the bottom layer of the cake with the Kirsch.
Mix the arrowroot with the cherrie juice and boil the mixture for a while. Add the cherries to the mixture and put it ovet the bottom layer.
Place the second layer on top of it.
Mix the soya milk with the cornmilk in a saucepan a little at a time, that way you will avoid lumps. Add the vanilla essence then heat and stir gently until it thickens. Cool.
Beat the margarine with a fork until it creams. Add the cooled cornmeal mixture a little at a time and blend until you have a rich smooth creamy mixture. Add more soya milk if it seems too thick.
Spread half of this mixture over the second layer of cake then place the top layer on top.
Spread half the rest on top then use the rest to decorate with a piping bag. Decorate with shavings of vegan chocolate and maraschino cherries.
