Pineapple is one of the most summery and delicious fruits anyone could think of. At leas I associate pineapples with summer. And the march is exactly the start of the good pineapple season. So what better knew could you get?
People around the world eat the pineapple differently. They eat it row, in desserts, they juice and even eat it with meat and pizza. The truth is that the fruit is so good that you could add it in almost any meal. Of course, there should be some balance and imagination. But I think you could deal with that easily. If you are having guests and you want to surprise them with a new and inventive dish – read along and choose the recipe you would enjoy doing the most. Or if you just want to change the meals you usually have. Or try them all. A good idea is to make a pineapple Monday for example. And every Monday to incorporate the pineapple in your meal. This way you will have fun with something amazingly delicious.
This is something you could start your day off with.
- 2 c cubed fresh pineapple
- 2 tbsp fresh mint
- 2 tbsp dresh basil
- 1 tbsp honey
- 1 cm chopped and seeded jalapeno
- ½ c ice cold water
Combine all the ingredients in a blender. Puree until all is smooth. If you prefer sweeter smoothies you could add some more honey after tasting what you just made.
To make it more attractive when you serve it, just pour in a cup, add some extra fresh mint leaves and a slice of pineapple. Also, you could put some additional ice. And that is all.
This is perfect for you in the morning or to make it as a refresher in the hot days. It is healthy and has no fat in it.
This is a perfect dip. Could be combined with many things – tacos, tortillas, meat. Fresh and yummy.
- 1 c chopped pineapple
- 1 chopped jalapeno
- fresh juice of 1 lime
- 1 chopped red onion
- 2 tbsp chopped cilantro
Actually, it is very easy to prepare that. Combine all the ingredients and mix them well. Leave them to stand for half an hour. This way the flavors will blend and you will get way more delicious dish, rather than just serving.
Serve it whatever way you want. It goes well with almost anything. It is all up to taste.
Pineapple and pork tacos with avocado cream
Everybody loves tacos. So this is a good recipe for everybody. It is not very hard to make and it is a killer.
- 12 corn tortillas
- 12 oz pork tenderloin, trimmed and cut into cubes
- ¼ tbsp salt
- ¼ fresh pineapple
- 2 tsp sugar
- ¼ tsp cinnamon
- ½ tsp coriander
- ¼ tsp red pepper
- 1 tbsp olive oil
- 2 tbsp fresh cilantro
- 1 avocado (mashed)
- 2 tbsp fresh lime juice
- 1/8 tbsp salt
- 2 tbsp fat-free sour cream
It might seem like many ingredients, but keep in mind that is both for the taco and the avocado cream.
In a cup mix the sugar, cumin, pepper, salt, coriander, cinnamon. Mix half of that with the pork and the other half with the oil. The remaining spices should be added to the pineapple. Let all the mixtures stand for 15 minutes in a room temperature room.
After you have mashed the avocado, add up to it the sour cream and whisk. Then add the lime and salt. Whisk again.
Put some oil in a large nonstick pan. Warm it up. Put the pork in the pan. Cook it (but don’t forget to turn it once or twice) until brown. This will take you between 7 and 10 minutes. Add the cilantro and toss. Put all in a plate. And leave it to cool a bit (2 minutes or so). Add the pineapple to the pan. Cook it for about 4-5 minutes (or until it is gold).
To make the tortillas:
- put 3 tortillas on a plate
- put ¼ of the pineapple and the pork on each one
- top with the avocado cream
And that is all. It might seem a little bit complicated at first, but actually it is very easy to. And believe me it is amazingly delicious.
