Weight Loss Dinner Ideas Based On Zucchini


No matter how long and how deep you search for weight loss solutions without exercising, you won’t succeed in achieving the wanted body look if you don’t get off the coach. This is the harsh truth, which sounds like a horror movie to me, because I want to have a magic wand, a proper spell and the needed abilities make my body look like one of the VS angels’ body. There is no magic in good health and strong body. There is only hard work and dedication. The hard work is the sweaty exercising and the dedication is the proper daily menus. I’m sure that you will find the proper exercise routine for you, because today I will skip the working out lecture and I will show you three ideas for a weight loss dinner – the main ingredient is zucchini.

The zucchini is full of vitamins and minerals. This must be the first fact that will grab your attention. Before you plan a weight loss routine, you have to think about the health first and then you are allowed to think about calories counting. The substances in the zucchini are: fiber, antioxidants, vitamins C and A and many more.

Another great benefit of the zucchini is that it is perfect for weight loss meals because it has one simple quality – it has low calorie level according to the mass of the food that it suggests, which mean that you can eat a lot of this plant without taking much calories per meal (of course, you have to take in mind the other ingredients of that meal). So, here are three ideas for combining zucchini with other ingredients for a weight loss dinner. Take a look:

The first meal is a pasta actually, but don’t worry – it is full of flavor, protein (chicken) and low-calorie and low-carb zucchini noodles. For this precious meal you will need:

  • 1 tablespoon of olive oil
  • 1 or two (according to the size) boneless chicken breasts
  • Your favorite herbs and seasonings
  • ¼ teaspoon garlic powder
  • 1 garlic clove
  • 1/3 cup white onions – diced
  • One can of tomatoes without skin and with juice
  • Some basil
  • 2 medium zucchini, trimmed into noodles.

All will be cooked in a saucepan over the stove. Turn the heat to medium and add the olive oil. When it is hot enough add the chopped chicken and season it with the salt and the pepper and then the garlic powder. Cook the chicken fully until it all goes white and it is no longer pink inside. Then add the minced garlic clove, the onions and cook again for couple of minutes more. Then add the tomatoes. Let the sauce boil, then reduce the heat and stir. After 5 minutes it should be all done. Then add the basil and the zucchini for several more minutes. Done! All this should be divided into two servings. Enjoy it!

Another idea, which also includes protein and low-carb zucchini noodles is the next meal – Zucchini spaghetti with fried eggs. You will have to cut the zucchini into proper noodle shape and then fry the eggs – easy, healthy and delicious.

  • You will need again two zucchinis, trimmed into noodles;
  • Some extra virgin olive oil;
  • Seasoning and herbs;
  • Two large eggs.
  • You can also add one or two other vegetables.

Cook the zucchini in a saucepan over the hot olive oil. Cook them with garlic and red pepper flakes. Stir and cook for three to five minutes. Then cook the eggs and place them over the zucchini carpet. Done!


The last idea is for a soup. This is a meal for cold and rainy nights when you will want to eat something warm and delicious. Take a look:

  • ½ cup diced red onion
  • 2 celery ribs
  • 1 large carrot
  • 2 garlic cloves
  • ½ teaspoon of red pepper flakes
  • 1 tablespoon of fresh or dry thyme
  • 4 chicken thighs
  • 2 bay leaves
  • 6 cups chicken broth
  • 2 cups water
  • 3 medium zucchinis

First of all, chop all the vegetables into the pieces you find most comfortable to eat. Then cook the onions, celery, carrots, garlic and red pepper flakes into hot olive oil in a large soup pot. Cook until the onions turn translucent. Then add the thyme and cook for one more minute. Remember to stir all the time.

Then pour the chicken broth and the water against with the chicken thighs. Cover the pot and let the liquid boil, then reduce the heat and let it cook for 30 minutes. Then remove the thighs and remove the bones and the skin and let them simmer in the pot several more minutes, uncovered. Set the meat aside with some of the juice.

Meanwhile ,you can cut the zucchinis into noodles.

Then remove the bones and the skin, also the bay leaves. Add the chicken meat and the noodles. Cook for five more minutes. Done! Eat while warm.
