The life we live is way too fast to have time to do all we want. Out every day life opts for fast solutions to any problem or thing we need to accomplish. And that is the reality that won’t change. Actually the opposite. And so since we don’t have enough time to do all we want, we have to cut back the time we spend on different activities.

One of the things that I usually don’t have time for, but lust to do and need to be cooked. In the modern age, we can’t always eat processed food or a take out or sandwiches. I know they are the easiest thing to do, but I just can’t live on them. And I am sure many modern women (and probably even men) feel the same way.

Once you know you can’t deal with eating take out, but don’t have hours to cook you have to embrace some faster solutions to the problem. There actually are much more alternatives than I have expected. So get ready and try a fast recipe, because it will be easy, but still homemade and delicious.

Breakfast – Blueberry Mug Muffin

Now I want to let you in on a secret. This one might be done in 3 minutes. Not even 5. So enjoy it. In a hectic morning what better than an easy breakfast that is amazingly delicious.

So combine flour, salt, baking powder and some sugar. You should put those in a mug. And mix them there. So don’t overdo it on the ingredients. Add up some butter. Just enough to make it delicious. This will make the muffin puffier and kind of fuller. Then add milk. Whisk very well until you get a smooth mixture. Add up some blueberries (or whatever kind of berries you want in your muffin).

Here comes the backing. But don’t worry, you don’t need an oven and preheating or whatever. You just need to stick your mug into your microwave. Put the timer on 90 seconds. And just watch this delicious, beautiful thing bake (or you could use the time to make your coffee).

And keep in mind you can use one of those travel coffee mugs and just grab that muffin with you when you leave the house. Isn’t that cool?

Lunch – Salmon and couscous

Lunch often is on the go for me. But at those days I am home, I really want to get the taste of something delicious and cooked by me with love. Also, I love eating seafood and I like to experiment. So this is a good one.

Boil some water. Pour it over about 80-100gr couscous. The water should be as much as to cover all of the couscous. Leave it like that for 3 to 5 minutes. Not more! While you wait for it grab a slice of salmon as big for one. Slice it into smaller pieces (finger-like). You can now use a pan or a grill. Depending on what you like. If you are going to the grill just heat it and put the salmon over. If you are into frying the salmon here is what to do: heat the pan, add the salmon strips. Add up some courgette, asparagus and chili. Cook for 2-3 minutes. Don’t forget to turn the fish.

Since the couscous will be done during that time you can add up some tomatoes, lemon juice and olive oil to it. This way it will give a healthy, but fresh taste that goes well with the fish. And that is all. You can serve your meal for yourself and enjoy it!

Dinner – chicken risotto

Risottos tend to be cooked way to slow and they look like too much work. But don’t worry this is a speedy one. Just 20 minutes and you will enjoy a healthy yet delicious meal.

Grab a pan, heat it and pour some oil in it. Add up some small slices of chicken breasts and cook them for about 3 minutes until they are reddish. It is easy to cook them because they become ready very fast. Remove them from the pan. Continue by putting onion into the hot pan. Cook it until it is soft. And remove. Then add some stock rice to that same pan. Cook it for about 10 to 15 minutes, but stir frequently. Add up some peas and cheese for the last two minutes.

After everything is cooked mix it all in a plate. Add some salt and pepper and enjoy. And since this is dinner and you have already gone through your whole day pour yourself a glass of wine and relax.
